• The sandwich bar – it’s open season on sandwich topping and there is no peanut butter or jam in sight. This griddled sourdough with steak, marinated radish and avocado is so easy to make and is perfect for a light lunch with friends.

    Griddled sourdough with steak, marinated radish and avocado

    Serves: 2
    Cooking Time: 45 minutes

    Ingredients

    • MARINATED RADISH

    • 5 radishes, thinly sliced
    • juice of 1 lemon
    • 30ml (2 tbsp) olive oil
    • 2,5ml (½ tsp) salt
    • STEAK
    • 200g sirloin
    • olive or avocado oil, for frying
    • salt and freshly ground black pepper, to taste
    • TO SERVE

    • 2 slices sourdough bread, griddled
    • 1 ripe avocado, thinly sliced
    • pea shoots

    Instructions

    For the marinated radish, combine the ingredients in a bowl and allow to marinate for up to 1 day but at least for 30 minutes.

    To cook the steak, rub the sirloin with olive oil and season. Cook in a hot griddle pan until medium-rare, 4 – 5 minutes per side. Remove from the pan and allow to rest for 10 minutes.

    Slice the steak into thin slices and place on top of the griddled sourdough. Add slices of avocado, marinated radish and pea shoots, and serve immediately.
