Malva pudding with Amarula syrup

Malva pudding with Amarula syrup

Ingredients

  • 50g butter
  • 30ml (2 tbsp) smooth apricot jam
  • 45ml (3 tbsp) white vinegar
  • 225g sugar
  • 250g cake flour
  • 500ml (2 cups) milk
  • 2 eggs
  • 10ml (2 tsp) baking soda mixed with 15ml (1 tbsp) water
  • Amarula syrup
  • 225g sugar
  • 30g (3 tbsp) salted butter
  • 125ml (½ cup) water
  • 75ml Amarula
  • warm custard, to serve

Preheat the oven to 180°C and grease a medium ovenproof dish.

Combine the butter, jam, vinegar and sugar in a saucepan, and heat until the sugar has dissolved. Remove from heat and cool for 5 minutes.

Add the flour and milk, alternating, to the sugar mixture. Beat in the eggs one at a time and stir in the baking soda.

Pour the batter into the prepared dish, place in the oven and bake for 30 minutes.

To prepare the syrup, combine all of the ingredients in a small saucepan and simmer until it has reduced slightly.

When the pudding is cooked, remove from the oven and pour the syrup over.

Allow the pudding to sit for 10 minutes before serving with warm custard.
