• These delicious fruits burst with flavour during the summer months but if you can’t find a cantaloupe, any round version will do.

    Melon caipirinhas

    Serves: 6
    Cooking Time: 10 mins plus extra for soaking

    Ingredients

    • 1 orange cantaloupe melon, thinly sliced
    • 300ml white rum
    • 90ml castor sugar
    • juice of 2 large lemons

    Lay the melon in a flat rectangularshaped container and drizzle with the rum. Cover and refrigerate for about 2 – 4 hours so that the melon can soak up the alcohol.

    In a cocktail shaker, mix the sugar with the lemon juice and shake until dissolved. Add the rum from the melons and shake to mix.

    Divide the mixture between tall glasses and add a few slices of the melon to each glass. Top with crushed ice and use the melon slices as a swizzle stick.
