Baby marrow chips recipe

These quick and easy “chips” are a tasty (and rather naughty) way to get your greens. Serve them as a snack when having a few friends over for drinks, or as a side dish to chicken, meat or fish.

Heat 100ml oil in a deep frying pan or pot. While the oil is heating, take a few medium-sized baby marrows and cut them into matchstick-sized pieces, then toss them in flour seasoned with salt and pepper. When the oil is hot, but not smoking, fry the sticks in batches until golden and crispy, about 3 – 5 minutes. Remove them and drain on kitchen towel. Sprinkle with Maldon salt and serve immediately, while still hot and crunchy. As an option, you could serve them with 15ml mayonnaise into which you have stirred 7ml basil pesto or ponzu sauce, made by combining 80ml soy sauce with 40ml freshly squeezed lemon juice. Either way, they are delicious.
