    Serves: Makes 6 small baguettes
Cooking Time: 5 hours 10 mins, including rising time

    Ingredients

    • 500g cake flour
    • 20ml salt
    • 2 x 10g instant yeast
    • 370ml warm water

    Instructions

    1

Mix the flour and salt together in a large mixing bowl. Sprinkle with the yeast and make a well in the centre of the flour mixture. Add the water and mix to form a soft, sticky dough.

    2

Turn out onto a lightly floured surface and knead until soft and smooth, about 10 minutes.

    3

Put the dough in a clean bowl and cover with a kitchen towel. Leave in a warm place to rise until double in size, about 2 hours.

    4

Knock back, recover and leave to rise for a further 50 minutes. Knock back again and leave to rise until double in size again, about 50 minutes.

    5

Divide the dough into 6 equal-sized pieces and shape into baguettes. Place on a lightly floured baking sheet and cover with a kitchen towel. Prove until double in size, about 1 hour.

    6

    Preheat the oven to 240°C.

    7

Make several diagonal slashes across the top of the baguettes and bake until golden and hollow-sounding when tapped underneath, about 40 minutes. Cool on a rack and serve.
