Gooey, melted cheese paired with tart fruit – a classic match that looks great and tastes delicious too. Camembert and cranberry filo parcels are everything you could want in one amazing package. Sweet, creamy, salty and tart!

Camembert and cranberry filo parcels

Ingredients

  • 100g ready-made filo pastry
  • 50g SPAR Butter, melted
  • 125g SPAR Marksbury Select
  • Camembert Cheese, roughly chopped
  • 125g SPAR Strawberry Jam
  • 50g SPAR Dried Cranberries
  • handful fresh chives, to tie

Instructions

Preheat the oven to 200°C. Cut the filo pastry into 10cm-square sheets. Place two sheets on top of each other, brushing each sheet with the melted butter to ensure they stick together. Place a small amount of Camembert, jam and cranberries in the centre of the double-layer square. Enclose the mixture by tying the corners up with string to form a small parcel. Brush with butter and repeat with the remaining squares.

Bake the parcels in the oven on a lined baking tray until golden brown, 5 minutes. Once baked, remove the string and carefully tie each parcel with a chive. Serve while still warm.

Notes

Cook's tip: While working with filo pastry, it is very important to cover it with cling film whenever it is not being used, to avoid it drying out.
