Elderflower cordial recipe

Elderflowers are straight out of fairy tales. Their sweet, delicate taste is unique and absolutely delicious. An iced jug of elderflower cordial is absolutely ideal for a hot summer day. 

Elderflower cordial

Ingredients

  • 1kg sugar
  • 1 litre water
  • 20 elderflower heads, fresh or dried
  • 3 lemons, quartered

Instructions

Boil the sugar and water in a pot until syrupy. Set aside to cool.

Add the elderflowers and lemons, squeezing the lemon wedges slightly to release some juice.

Leave to steep in the fridge for 24 hrs, then strain and place in a sterilised jar in the fridge. It will keep for a couple of days.

To serve, mix the cordial with sparkling water according to your taste.
