Namibian oysters on ice with lemon rind salsa recipe

Namibian oysters are considered among the best in the world and this simple recipe lets them take the spotlight. This dish is African culinary elegance at its finest! The saltiness of the oysters is perfect with refreshing, zesty lemon.

Namibian oysters on ice with lemon rind salsa

Serves: 12
Cooking Time: 10 mins

Ingredients

  • 3 lemons
  • crushed ice
  • 12 Namibian oysters
  • ½ red pepper, seeded and finely chopped
  • Tabasco sauce, to taste
  • fresh coriander leaves, to garnish

Instructions

Pour boiling water over the lemons. Dry them and chop the whole lemons into small pieces. Set aside until needed.

Just before serving, fill small bowls with the ice. Open the oysters, discarding the top shell. Loosen the oysters from the shell and place a shell on top of the ice.

Top with the lemon and red pepper, drizzle with Tabasco sauce and garnish with coriander leaves. Insert a cocktail stick into the oyster and serve.
