Spiced white hot chocolate

Serves: 2
Cooking Time: 30 mins

Ingredients

  • 500ml (2 cups) low-fat milk
  • 2 whole star anise
  • 3 cardamom pods
  • 1 cinnamon stick
  • 60ml white rum
  • 400g white chocolate, finely chopped
  • 125ml (½ cup) fresh whipped cream, to serve
  • 5ml (1 tsp) ground cinnamon, to serve

Instructions

1

Heat the milk, star anise, cardamom and cinnamon in a small saucepan over medium heat, stirring occasionally until bubbles form around the edge of the pan. Remove from heat and let it stand for 15 minutes to cool.

2

Strain the milk into a bowl and discard the whole spices.

3

Return the empty saucepan back to medium heat. Add the rum, chocolate and infused milk, and gently heat, stirring until the chocolate has melted and the mixture is hot.

4

Pour into two large mugs and serve with a dollop of whipped cream sprinkled with ground cinnamon.
