Vanilla orange custard slices recipe

Vanilla orange custard slices are little slices of heaven and perfect for a teatime treat. The creaminess of the custard is undercut by a refreshing citrus tang, and the light puff pastry harmonises the two beautifully. What could be better than custard-stuffed pastry?

Vanilla orange custard slices

Serves: 10
Cooking Time: 1 hour + extra, for setting

Ingredients

  • 370ml vanilla milk
  • 370ml vanilla-flavoured fresh cream
  • 50g butter, chopped
  • 170ml castor sugar
  • 80ml (1/3 cup) cornflour
  • 125ml (½ cup) orange juice
  • 6 large egg yolks
  • icing sugar, for dusting
  • 2 x 400g ready-made puff pastry

Preheat the oven to 180°C.

Place the puff pastries on two rectangular baking trays lined with baking paper. Top each with additional baking paper and then another rectangular baking tray and bake until golden, about 20 minutes. Cool on a wire rack.

For the custard, cook the milk, cream, butter and castor sugar over medium heat until the mixture comes to the boil. Remove from the heat.

Combine the cornflour and orange juice and whisk into the hot milk mixture together with the egg yolks. Return to the heat and whisk until it thickens to a custard.

Trim the pastry sheets into two 22cm squares. Place one of the sheets into a 22cm square baking tray lined with baking paper.

Pour the custard over the pastry and top with the other pastry sheet and press gently. Refrigerate until set, about 3 hours or overnight. Dust with icing sugar and slice to serve.
