White chocolate and peanut butter biscotti recipe

White chocolate and peanut butter biscotti are elegant Italian biscuits full of flavours that are adored worldwide. Creamy white chocolate and peanut butter are the perfect fillers for these lighter-than-air biscuits. Perfect for anytime of the day!

White chocolate and peanut butter biscotti

Serves: Makes 30 – 35 small biscuits
Cooking Time: 20 mins

Ingredients

  • 1 x packet Sasko Quick Treats Scone Mix
  • 90g butter
  • 1 extra large egg
  • 140ml milk
  • 150g white chocolate, cut into chunks
  • 45ml (3 tbsp) peanut butter
  • 30ml (2 tbsp) castor sugar, to dust

Instructions

Preheat the oven to 200°C and line a baking tray with baking paper.

Place the scone mix in a mixing bowl and rub the butter into the dry mixture.

Beat the egg and milk together in a jug. Slowly add the wet ingredients to the dry, using a palette knife to cut into the mixture until a soft dough forms.

Add the chocolate and peanut butter to the dough, and gently mix through. Divide the dough into three portions.

Roll each portion into a sausage shape and dust with castor sugar. Cut 3cm pieces of dough at an angle and place on the prepared tray.

Bake until golden, 8 – 10 minutes. Remove from oven and cool on wire racks.
