It’s the perfect combination of sweet treats and romance and will leave the one you love swooning for more. American-style white chocolate and cranberry fudge

Ingredients

  • 40g (4 tbsp) unsalted butter
  • 3 cups mini marshmallows
  • 200g (1 cup) sugar
  • 125ml (½ cup) fresh cream
  • 2,5ml (½ tsp) salt
  • 2,5ml (½ tsp) vanilla extract
  • 1 box white chocolate chips
  • 1 cup dried cranberries,
  • coarsely chopped

Instructions

Grease a 20cm-square baking pan and line with baking paper, leaving an overhang on the edges. Spray the paper with cooking spray.

Combine butter, marshmallows, sugar, cream and salt in a large saucepan, and cook over medium heat, stirring occasionally, until the marshmallows have melted, about 10 minutes.

Remove from heat and stir in the vanilla, chocolate chips and half of the cranberries until the chocolate has melted.

Pour the mixture into the prepared pan and smooth the top. Sprinkle with remaining cranberries.

Cool for 30 minutes then refrigerate until set, about 1 hour. Use the overhanging baking paper to lift the fudge onto a cutting board and cut into squares.
