• Marie’s three-cheese muffins

    Ingredients

    • 2 large eggs, beaten
    • 250ml (1 cup) buttermilk
    • 125ml (½ cup) oil
    • 15ml (1 tbsp) fresh flat-leaf parsley, chopped
    • 5ml (1 tsp) fresh chives, chopped
    • 240g (2 cups) cake flour, sifted
    • 12ml baking powder
    • 4ml dry mustard powder
    • 4ml salt
    • 2ml freshly ground black pepper
    • 300ml Cheddar, grated
    • 125g ripe Camembert, cut into 2cm x 2cm squares
    • TOPPING
    • 100ml Parmesan, grated

    Preheat the oven to 180°C.

    Combine the eggs with the buttermilk, oil, parsley and chives.

    Mix the flour, baking powder, mustard powder, seasoning and grated Cheddar in a large bowl.

    Add the egg mixture to the flour mixture and mix lightly until just combined, being careful not to over-mix.

    Half fill well-greased muffin pans with the mixture. Place one Camembert cheese square into the centre of each muffin. Top with the remaining muffin mixture to three quarters full, covering the Camembert. Sprinkle the top of the muffins with grated Parmesan.

    Bake in the preheated oven until cooked through and golden, about 15 – 20 minutes.
