Zucchini steaks with pesto & almond crumb

Cauli steaks for who? There’s a new veggie on the block! These succulent zucchini steaks are served on a bed of vibrant rocket pesto and topped with a golden, crispy almond crumble. Perfect as a light lunch, starter or part of a mezze spread.

 

Baby marrow steaks with rocket pesto & almond crumb

HANDS-ON TIME 25 min | TOTAL TIME 45 min | SERVES 2

INGREDIENTS

Home-made breadcrumbs

  • ¼ cup oil
  • Handful thyme sprigs, bruised
  • 2 cups stale bread, cubed
  • ½ cup almonds, toasted

Rocket pesto

  • 2 Tbsp. sunflower seeds, lightly toasted
  • 120 grams rocket
  • 1 garlic clove, peeled and crushed
  • 1 Tbsp. lemon juice
  • 60 grams Parmesan, finely grated
  • ½ cup olive oil

Garlicky baby marrow steaks

  • ¼ cup olive oil
  • 1 garlic clove, sliced
  • 350 grams baby marrow, ends trimmed, halved

METHOD

Home-made breadcrumbs

PREHEAT oven to 180°C.

HEAT oil in a pan over medium-high heat. When hot, add thyme and fry until crispy. Remove using a slotted spoon and drain on paper towel. Place bread cubes in a bowl and coat with thyme oil and a generous sprinkle of salt.

ARRANGE bread cubes on a baking tray and toast for 12–15 minutes, turning the pieces halfway through cooking time, until golden and crispy. Remove and cool completely.

PULSE bread cubes in a food processor until they resemble breadcrumbs or use your hands to break into fine pieces.

TOSS the fried thyme, breadcrumbs and chopped almonds in a serving bowl.

Rocket pesto

PLACE seeds, rocket, garlic, lemon juice and Parmesan in a food processor; season well with salt and pepper. Pulse until almost blended, scraping down the sides as you go. With the motor running, slowly stream in the olive oil and blend until emulsified.

Garlicky baby marrow steaks

PLACE oil in a pot over medium-high heat. Fry garlic until golden.

REMOVE garlic from the oil, then fry the baby marrow halves in batches until tender and browned, about 5 minutes. Remove with a slotted spoon and drain on paper towel. Season with salt.

SERVE baby marrow steaks on a bed of rocket pesto, topped with a generous sprinkle of thyme and almond crumb.
