Pumpkin polenta wedges with romesco

This dish may take a little extra time but it’s well worth the wait once you bite into a crispy Parmesan polenta wedge.

INGREDIENTS

  • 500 grams pumpkin, peeled and cut into 1 cm pieces
  • 2 cups milk
  • 2 cups vegetable stock
  • 1 cup instant polenta
  • 3⁄4 cup grated Parmesan
  • 1 tin white beans, drained and rinsed
  • 2 Tbsp. olive oil
  • 60 grams rocket leaves
  • 90 grams goat’s cheese, crumbled
    ROMESCO SAUCE
  • 1⁄2 cup drained store-bought grilled pepper strips
  • 1⁄4 cup almonds
  • 2 Tbsp. olive oil
  • 1⁄2 Tbsp. red-wine vinegar
  • 1⁄2 garlic clove, finely chopped 1⁄2 tsp. smoked paprika

METHOD

COOK pumpkin in a pot of salted boiling water until tender. Drain.
GREASE a 20 cm x 30 cm cake tin. Line the base and long sides with baking paper, extending the paper by 5 cm above the edges.

PLACE milk and stock in a pot over medium heat and bring to a simmer.Gradually add polenta, stirring constantly. Reduce heat to low and cook, stirring, for 10 minutes or until polenta thickens. Stir in Parmesan, pumpkin and beans. Season well.SPREAD polenta mixture into the tin and cool for 10 minutes. Cover and refrigerate for 2 hours or until firm. PREHEAT oven to 220°C. Line an oven tray with baking paper.

CUT polenta into wedges and place on the prepared tray. Drizzle with oil and bake for 25 minutes, turning halfway through, until golden and crisp.

ROMESCO SAUCE

Place the peppers, almonds, oil, vinegar, garlic and paprika in a blender and blend until smooth. Transfer to a bowl and season.

SERVE polenta wedges with rocket, goat’s cheese and romesco sauce.

TIP: The polenta can be made, to the end of the refrigeration step, up to 2 days ahead of time for easy assembly on the day. This is especially handy if you are making it for a dinner party.
