This red fruit salad with whipped ricotta is a harmony of flavours that are just perfect for a light dessert or summer treat.
Red fruit salad with whipped ricotta recipe:
INGREDIENTS
- 1 tsp finely grated orange zest
- 2 tbsp orange juice
- 1 tbsp lime juice
- 1 cup caster sugar
- 1 tsp rosewater
WHIPPED RICOTTA
- 240 grams fresh ricotta
- 1 tbsp honey
FRUIT SALAD
- 1 medium orange
- 250 grams fresh cherries, pitted
- 125 grams fresh raspberries, torn
- 2 1/2 cups watermelon, thinly sliced
- 1/2 cup pomegranate seeds
- mint leaves, to serve (optional)
METHOD
ROSEWATER AND CITRUS SYRUP
Combine zest, juices, sugar and 1 cup of water in a pot. Bring to a simmer over medium heat until the sugar dissolves.
Bring to the boil and cook for 8 minutes or until thickened slightly. Stir in the rosewater and allow to cool.
WHIPPED RICOTTA
Combine ricotta and honey in a bowl and beat using a hand whisk until smooth. Transfer to a serving bowl.
FRUIT SALAD
Peel the zest off of the orange and place in a bowl of iced water for 5 minutes or until curled, then drain.
ARRANGE the fruit on a platter, sprinkle with half the orange curls and the mint leaves.
