Sweet chilli chicken and BLT salad

BLT is a classic sammie named after the initials of its primary ingredients: bacon, lettuce and tomato. For those of you looking for a lower-carb lunch, then this BLT-inspired salad is for you. Featuring sweet & sticky chicken, salty bacon, crisp veg and a creamy dressing, this salad has it all. Everything can be prepared in advance to help you prepare for lunch boxes or to enjoy as a picnic. Slice up the chicken beforehand for easier eating.

INGREDIENTS

SWEET CHILLI CHICKEN

  • 1/2 cup sweet chilli sauce
  • 1 garlic clove, minced
  • 1/3 cup lime juice
  • 4 chicken breast fillets

BLT SALAD

  • 8 slices streaky bacon
  • 250 grams cherry tomatoes
  • 1/3 cup mayonnaise
  • 1 tbsp finely chopped parsley
  • 2 baby cos lettuce, leaves separated
  • 1 avocado, thinly sliced

 

METHOD

SWEET CHILLI CHICKEN

HEAT an oiled grill plate over medium heat. Combine the sweet chilli sauce, garlic and half the lime juice in a bowl; season well. Toss the chicken in the marinade to evenly coat.

COOK the chicken in batches on the grill for 5 minutes on each side or until cooked through and lightly charred. Baste with extra marinade as you go. Be careful not to overcook the chicken, as it will become tough and dry. Remove the chicken from the heat and cover to keep warm.

BLT SALAD

COOK the bacon and tomatoes separately on the grill plate over medium heat until the bacon is crisp and the tomatoes begin to soften.

WHISK together the mayonnaise, remaining lime juice and parsley in a bowl

DIVIDE the lettuce between four serving plates. Top each with a chicken breast, two pieces of bacon, tomatoes and avocado. Finish with a drizzle of the dressing and enjoy!
