Tuna & olive baguettes

This Mediterranean twist on a tuna mayo is packed full of flavour.

INGREDIENTS

  • large baguettes
  • cup mayonnaise
  • 425 grams tinned tuna, drained and flaked
  • cup pitted kalamata olives, sliced
  • 1 tomato, sliced
  • ½ red onion, thinly sliced
  • 1 cucumber, sliced into ribbons
  • 2 tbsp basil leaves

METHOD

SLICE each baguette lengthways down the middle without cutting all the way through. Spread with mayonnaise.

FILL baguette with tuna, olives, tomato, red onion, cucumber and basil.

CUT in half and serve.
