Baklava cheesecake cups

A Turkish twist on a decadent, classic dessert. Try these Baklava cheesecake cups at your next get together .

SERVES 16 |HANDS-ON TIME 30 min |TOTAL TIME 55 min 

INGREDIENTS

  • 100 grams pistachios
  • ½ cup caster sugar
  • 2.5 ml ground cinnamon
  • ½ tsp ground cardamom
  • 6 sheets filo pastry, cut in half crossways
  • 50 grams butter, melted
  • 2 tsp icing sugar
  • ¾ cup pomegranate seeds
  • 125 grams raspberries

POMEGRANATE SYRUP

  • ½ cup fresh pomegranate juice
  • cup caster sugar

CHEESECAKE FILLING 

  • cups icing sugar
  • 750 grams cream cheese, softened
  • 2 tbsp rosewater
  • tsp lemon zest 
  • ¼ cup lemon juice

 

METHOD

PREHEAT the oven to 180°C. Line two oven trays with baking paper. 

PLACE the nuts on one oven tray; roast for 5 minutes or until browned lightly. Transfer to a food processor; cool. Process nuts until finely ground. Place nuts in a bowl with caster sugar and spices, stir to combine. 

WASH oven tray to cool; re-line with baking paper. 

PLACE one pastry half on each oven tray and lightly brush with melted butter. Sprinkle ¼ cup of the nut mixture between pastry halves. Repeat layering with pastry halves, butter and nut mixture. 

TOP with remaining pastry halves; brush with remaining butter and sprinkle with remaining nut mixture. 

BAKE for 15 minutes or until pastry is golden; cool. Dust with icing sugar, then cut the baklava into small pieces. 

PLACE in an airtight container until needed. 

 

POMEGRANATE SYRUP

STIR ingredients in a small pot over low heat until sugar dissolves. Bring to the boil; boil 5 minutes or until thick and syrupy. 

 

CHEESECAKE FILLING

PLACE ingredients into a bowl, beat together with a hand help mixer until smooth and creamy. 

SPOON ¼-cups of cheesecake filling into containers; top with chopped baklava, pomegranate seeds and raspberries. Just before serving, drizzle with syrup.
