The basis of a good pizza is definitely in the dough. Pizza has to be one of the ultimate comfort foods: flatbreads with a host of delicious toppings and a crust that can be as thick or thin as you like. Many pizza devotees believe in keeping this savoury meal of peasant origins as simple as possible: a good dough, a robust and rustic tomato sauce, torn mozzarella and scatterings of fresh basil – job done!

Mastering this fabulously easy and basic pizza dough will ensure you never suffer one of those ‘what’s for dinner’ moments and will have friends and family declaring, “This is just like mamma used to make!”

Basic pizza dough

Serves: 4 – 5 large pizzas
Cooking Time: 10 mins + 30 mins to rise


  • 1kg cake flour
  • 10g sachet instant yeast
  • 5ml (1 tsp) salt
  • 15ml (1 tbsp) sugar
  • 45ml (3 tbsp) olive oil
  • 625ml (2½ cups) lukewarm water



Combine all the dry ingredients together in a large bowl and make a well in the centre.


Pour the oil and half of the water into the well and start pulling flour in from the sides of the bowl. Add the remaining water to form a fairly sticky dough.


Turn the dough out onto a floured work surface and knead well until the dough becomes smooth and elastic, about 10 minutes.


Place the dough in a lightly oiled bowl and cover with a tea towel. Allow to rise in a warm place until double in size, about 35 minutes.
