Basic sponge recipe

Basic sponge


  • 250g butter
  • 250g sugar
  • 4 large eggs
  • 360g (3 cups) cake flour
  • 250ml (1 cup) milk
  • 20ml (4 tsp) baking powder
  • a pinch of salt
  • 10ml (2 tsp) vanilla extract
  • zest of 1 lemon
  • 100g almonds, chopped and toasted (optional)



Cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Gradually add the flour and milk, alternating between the two, until everything is used. Fold in the baking powder, salt, vanilla extract, zest and nuts.
