This satisfying char-grilled veggie wrap is great, especially when you cross that (very thin) line between peckish and hangry!
INGREDIENTS
- 1 brinjal, thinly sliced
- 1 red pepper, thinly sliced
- 2 tsp. olive oil
- 285 gram jar artichoke hearts, drained
- 200 grams store-bought butternut mash, heated
- 4 white flour wraps
- 40 grams wild rocket
METHOD
PREHEAT a griddle pan over high heat.
TOSS the brinjal and red pepper with the olive oil and season with salt and pepper. Grill for 5-8 minutes, until soft and charred. Add the artichoke hearts at the last minute to heat through.
HEAT wraps in the microwave for 30 seconds until warmed. Spread a layer of butternut mash over each wrap and top with char-grilled veggies, artichoke hearts and rocket. Season to taste, roll up and enjoy.
Tip: Enjoy these wraps with any leftover toppings you have sitting in your fridge such as hummus, roast chicken or chickpeas.
