Cheesy prosciutto rice cakes

Looking for a quick and easy lunch. Try these 15 minute Cheesy prosciutto rice cakes. A flavourful bite -sized snack that is perfect for any work day snack or even great for the kids!

HANDS-ON TIME 15 min | TOTAL TIME 15 min| SERVES 4

INGREDIENTS

  • 450 grams rice, cooked 
  • ½ cup frozen peas
  • 2 slices (30g) prosciutto, coarsely chopped
  • 2 tsp. finely grated lemon rind
  • ¼ cup finely chopped fresh chives
  • 1 ½ cups coarsely grated mozzarella
  • 2 eggs
  • ½ cup packaged breadcrumbs

TO SERVE

  • 1 cup tomato relish
  • 160 grams watercress

 

METHOD

PLACE peas in a small heatproof bowl, cover with boiling water. Stand for 1 minute, then drain. 

COMBINE peas, rice, prosciutto, lemon rind, chives, mozzarella, eggs and breadcrumbs in a large bowl; season well. 

HEAT a large oiled large frying pan over medium heat. Using wet hands, shape 1/4-cups of rice mixture into patties. 

COOK patties, in batches, for about 2 minutes each side or until browned and cooked through. 

REPEAT to make a total of 12 patties. Serve the Cheesy prosciutto rice cakes with watercress and tomato relish.

 

<FOOD TEAM TIP> Swop out the prosciutto for bacon as a more excusable and affordable option.
