Feta, basil and vegetable lamb roasts

We’ve taken a traditional lamb roast and added a fun twist. Using cap-on lamb rump roasts, we stuffed and trussed them, then roasted them along with some sweet potato to create a Mediterranean feast.

Feta, basil and vegetable lamb roasts

HANDS-ON TIME 20 min | TOTAL TIME 1 hour 5 min | SERVES 4–6

INGREDIENTS

FOR THE MINI LAMB ROASTS

  • ½ cup pickled Mediterranean vegetables, chopped
  • 50 grams feta, crumbled
  • 2 Tbsp. chopped basil
  • 4 lamb mini roasts (cap on lamb rump)
  • 1 kg orange sweet potato, cut into wedges
  • Cooking-oil spray
  • 1 Tbsp. chopped fresh rosemary

TO SERVE

  • 1/4 cup of rocket
  • 1 cup cherry tomatoes, halved
  • 1 Tbsp. olive oil

METHOD

PREHEAT the oven to 220°C.

COMBINE vegetables, feta and basil in a bowl.

MAKE a horizontal cut in each lamb roast to make a large pocket, without cutting all the way through. Push the vegetable mixture into the pockets. Tie lamb at 3 cm intervals with kitchen string. Place lamb on a large oiled oven tray. Add sweet potato to the tray, spray with oil and season.

ROAST uncovered for 35 minutes. Remove and cover the lamb and allow it to stand for 10 minutes. Remove kitchen string, then slice thickly.

To serve Combine rocket and tomatoes together in a bowl and drizzle over olive oil. Season with salt and freshly cracked black pepper. Serve lamb and sweet potato wedges alongside rocket and tomato salad.

Tip from the team: Mini lamb roasts are a cut from the muscles that make up the lamb leg. These cuts of meat make for a quick and easy roast if you are looking to be fancy on a weeknight.
