Flourless orange & white chocolate cake

Seasonal fruit adds a fresh burst of flavour (and a pop of colour) to this ridiculously yummy bake!

INGREDIENTS

  • 1 large orange, washed
  • 4 eggs
  • 50 grams butter, melted
  • 300 grams white chocolate, grated coarsely (100 grams reserved for serving)
  • 220 grams caster sugar 240 grams ground almonds 11⁄2 tsp. baking powder

METHOD

PLACE the whole orange in a pot with enough water to cover and bring to the boil. Turn down the heat and simmer until tender for about 30 minutes. Drain and allow the orange to cool to room temperature. One cooled, cut the edges off the ends of the orange and discard. PREHEAT the oven to 160°C. Grease a 20 cm springform cake pan and line the base and sides with baking paper.

HALVE the orange and discard seeds. Process orange, including rind, until pulpy. Add eggs and butter and process until smooth. Transfer to a bowl.

STIR in white chocolate, sugar, ground almonds and sifted baking powder. Pour mixture into pan.

TIP: The base for this cake is a whole boiled and pureed orange, paired with an almond batter inspired by cookbook author Claudia Roden. With Middle Eastern origins, this version is the perfect balance of moisture and crumb. The addition of white chocolate is the perfect balance with the tartness of the orange.
