Herb-crumbed baked beans
These herb-crumbed baked beans are our not so average baked beans! This dish is the perfect side to any meal and great way to fancy up those beans.
HANDS-ON TIME 20 min| TOTAL TIME 45 min |SERVES 4- 6
INGREDIENTS
- 1 onion, chopped
- 100 grams pancetta, coarsely chopped
- ¼ cup olive oil
- 2 slices sourdough bread, torn
- ½ cup finely grated parmesan
- ¼ cup fresh oregano leaves
- 2 garlic cloves, crushed
- 3x 400 grams canned white beans, drained, rinsed
- 1 ½ cups bottled passata
- 1 tbsp Worcestershire sauce
- ¼ cup maple syrup
- 2 tsp smoked paprika
- 150 grams baby radishes, halved, optional
METHOD
PREHEAT the oven to 220°C.
COMBINE the onion, pancetta and 1 tbsp of the oil in a 2-litre ovenproof dish.
BAKE, uncovered, for about 15 minutes or until the onion is browned lightly.
MEANWHILE, combine bread, parmesan, oregano and remaining oil in a medium bowl.
STIR garlic, beans, sauces, maple syrup and paprika into pancetta mixture and season. Top with bread mixture.
BAKE, uncovered the Herb-crumbed baked beans for about 10 minutes or until bread is browned.
SERVE the Herb-crumbed baked beans alongside some delicious and peppery radishes
<FOOD TEAM TIP> If you can’t find any pancetta, substitute it for prosciutto or bacon, or feel free to leave it out entirely.
