Okonomiyaki is a savoury Japanese pancake containing a variety of ingredients, “okonomi” meaning “what you like” and yaki meaning “to grill”. A savoury Japanese pancake is a perfect starting base to exhibit other fun flavours, these can appear either inside the pancake itself (like meat) or on top, such as pickled ginger, Japanese mayonnaise and fish flakes (Katsuobushi). We paired our Okonomiyaki with a light avocado cream. Enjoy!
Okonomiyaki with avocado cream
SERVES 4 / HANDS-ON 35 min / TOTAL TIME 45 min
INGREDIENTS
For the Okonomiyaki
- 1/4 cabbage (300g), thinly sliced
- 2 spring onions, finely chopped
- 1 cup chopped coriander
- 5 eggs, lightly beaten
- 1 cup breadcrumbs
- 1/4 cup vegetable oil
For the avocado cream
- 1 avocado (320g), chopped
- 1/2 cup mayonnaise
- 1 tbsp lemon juice
- To serve
- 1 tbsp barbecue sauce
- 1/3 cup pickled ginger
- 2 tsp sesame seeds, toasted
METHOD
For the Okonomiyaki
COMBINE the cabbage, onion, coriander and egg in a large bowl. Stir in breadcrumbs and season well. Stand for 10 minutes or until cabbage softens slightly.
HEAT 1 tbsp of the oil in a pan over medium heat. Cook 1/3-cup measures of cabbage mixture, in batches, for 2 minutes each side or until golden, firm and cooked through.
For the avocado cream
PLACE avocado, mayonnaise and juice in a food processor, season and blend until smooth.
SERVE okonomiyaki with avocado cream, barbecue sauce, ginger and sesame seeds.
