Pork fillet with caramelised apple and ginger beer

Served with sticky onions, caramelised apples and carrot potato mash, this succulent pork fillet is the ultimate winter comfort dinner!

 

Pork fillet with ginger beer & caramelised apple

SERVES 4 | HANDS-ON TIME 45 min | TOTAL TIME 1 hr 10 min

GLUTEN-FREE

INGREDIENTS

  • 700 grams potatoes, peeled and chopped
  • 2 carrots, chopped
  • 50 grams butter
  • 600 grams pork fillet
  • 2 apples, thinly sliced crossways
  • 1/2 onion, thinly sliced
  • 1 cup ginger beer
  • 2 tbsp marmalade
  • Handful micro herbs

METHOD

PLACE potatoes in a pot and fill with water. Bring to a boil over medium-high heat and cook for 10 minutes. Add carrots and cook for a further 7 minutes until tender. Drain and transfer to a bowl.

MASH potato and carrot with half the butter. Season with salt and pepper.

MELT remaining butter in a pan over medium-high heat. Cook pork, turning, for about 10 minutes or until cooked through. Remove from the pan, cover and allow to rest for 5 minutes.

ADD apples to the same pan and cook over high heat for 2 minutes on each side or until caramelised. Remove from the pan.

COOK onion in the same pan over medium heat, stirring, for 3 minutes or until softened. Add ginger beer and marmalade and bring to a boil. Reduce the heat and simmer, uncovered, for 5 minutes or until thickened slightly.

SLICE pork and serve with apple and mash. Drizzle with sticky onion sauce and garnish with micro herbs.

 

Tip from the team: We suggest using mixed citrus or lemon marmalade for the sticky onions.
