These juicy pork skewers are perfectly complemented with a sweet and nutty sauce.
- 1⁄2 cup roasted peanuts, chopped 1 Tbsp. light brown sugar
- 1 cup coconut milk
- 1 tsp. fish sauce
- 1⁄4 cup soy sauce
- 1 tsp. chilli flakes
- 1 Tbsp. peanut butter
- 800 grams pork fillet, cut into 2cm pieces
- 300 grams baby pak choi
- 450 grams cooked white rice
- 1⁄4 cup desiccated coconut, toasted 2 spring onions, thinly sliced
HANDFULL fresh coriander leaves 1 lime, cut into wedges
SATAY SAUCE Stir together all the ingredients in a bowl until well combined. Reserve 1 cup of sauce and set aside.
PORK SKEWERS Thread pork onto eight 23cm metal skewers and coat with remaining sauce.
COOK skewers on a heated oiled grill plate over medium-high heat until cooked through, about 10 minutes.
HEAT rice and stir in the coconut and spring onions. Season to taste.
