Pork Satay Skewers with Coconut Rice

These juicy pork skewers are perfectly complemented with a sweet and nutty sauce. INGREDIENTS SATAY SAUCE 1⁄2 cup roasted peanuts, chopped 1 Tbsp. light brown sugar 1 cup coconut milk 1 tsp. fish sauce 1⁄4 cup soy sauce 1 tsp. chilli flakes 1 Tbsp. peanut butter PORK SKEWERS 800 grams pork fillet, cut into 2cm pieces 300 grams baby pak choi 450 grams cooked white rice 1⁄4 cup desiccated coconut, toasted 2 spring onions, thinly sliced METHOD HANDFULL fresh coriander leaves 1 lime, cut into wedges SATAY SAUCE Stir together all the ingredients in a bowl until well combined. Reserve 1 cup of sauce and set aside. PORK SKEWERS Thread pork onto eight 23cm metal skewers and coat with remaining sauce. COOK skewers on a heated oiled grill plate over medium-high heat until cooked through, about 10 minutes. HEAT rice and stir in the coconut and spring onions. Season to taste.
