Chocolate buns with coffee ganache

Chocolate buns with coffee ganache INGREDIENTS For the chocolate buns 1 cup flour 1 cup brown sugar 1 tbsp baking powder 1⁄2 tsp cinnamon Pinch nutmeg 1⁄2 cup cocoa 1⁄2 cup warm black coffee 1⁄2 cup oil 200 g dark chocolate, melted 5 eggs, separated For the sweet cream 1 cup cream 1 tbsp honey 1⁄4 tsp ground cloves 1⁄4 tsp ground nutmeg 1⁄4 tsp ground cardamom For the coffee ganache 250 g dark chocolate, finely chopped 1/2 cup cream Pinch salt 2 tbsp instant coffee METHOD For the chocolate buns PREHEAT the oven to 180°C. Grease 10 round 8cm moulds and set aside. MIX all the dry ingredients together. WHISK coffee, oil, melted chocolate and egg yolks until smooth. Pour into the dry ingredients and mix until combined. WHIP egg whites to soft-peak stage and fold them into the chocolate. DIVIDE the mixture between prepared moulds and bake for 30 minutes.
