    Macaroni and cheese

    Ingredients

    • 500 grams macaroni or pasta of choice, cooked according to packet instructions
    • 4 tbsp butter
    • 4 tbsp flour
    • 1 tbsp onion powder
    • 1 tbsp paprika
    • 1 tbsp garlic powder
    • 1L- 1.2 L warmed milk
    • 1 ½ cups grated cheddar cheese, plus extra for topping
    • 1 ½ cups grated white cheddar plus extra for topping
    • 2 tsp dijon mustard
    • Salt and freshly ground pepper to taste
    • 1 cup mozzarella for topping
    • 1 tbsp parsley

    Instructions

    PREHEAT the oven to 220ºC

    HEAT butter in a pot over medium heat. Once melted, add in flour and spices. Stir to combine and cook for 1 minute.

    GRADUALLY pour in warm milk, whisking after every addition.Bring to the boil and cook for 1-2 minutes on a low heat. Add in cheese and dijon mustard. Cook for 2-3 minutes until the cheese is fully melted.

    ADD pasta to the sauce and mix to combine. Season to taste.

    TRANSFER into a baking dish and top with extra cheese.

    BAKE for 15-20 minutes, until golden brown and crispy.

    SERVE topped with chopped parsley.
