Brunch just got better with these easy spinach, bacon, and egg cups — light, delicious, and totally irresistible. Even Granny will be asking for the recipe!
Spinach, bacon and egg cups
Ingredients
- 10-12 large eggs
- ¼ cup milk or cream
- Freshly ground pepper
- ¾ cup chopped spinach
- ¼ cup cooked bacon
- ¼ cup chopped red onion
- ¼ cup crumbled feta
Instructions
PREHEAT oven to 180ºC
CRACK eggs into a jug and whisk. Add milk and freshly ground pepper and whisk until combined.
GREASE a small muffin tray or small silicone muffin tray, add the filling, starting with the spinach and ending with the feta cheese. Pour over egg mixture.
BAKE for 15-25 minutes until cooked. Remove from the oven and allow to cool for 10 minutes. Remove from the tin and allow to cool further on a cooling rack.
SERVE with sweet chili sauce or enjoy as is.
