The passion wagon is a refreshing non-alcoholic cocktail courtesy of SohBar liquid chefs Andries Volschenk and Anthony Wingfield. Full of fruity flavour and the secrets of SohBar’s signature liquid magic, it’s the perfect drink for a relaxed afternoon. Virgin territory never looked this good!

Ingredients
Sohbar simple syrup
- (makes 950ML)
 - 1L filtered water
 - 250g high-quality fructose
 Sohbar star anise syrup
- 950ml SohBar simple syrup
 - 13 whole star anise
 Cocktail
- 2 – 3 grapefruit wedges
 - pulp of ½ granadilla
 - 25ml pineapple juice
 - 5ml (1 tsp) ginger juice
 - 25ml SohBar star anise syrup
 - 8 – 10 fresh mint leaves
 - soda water, to top up
 - SohBar Pure Pomegranate
 - aromatic bitters foam, to garnish (optional)
 
Instructions
For the SohBar simple syrup, bring the water and fructose to a boil, then simmer, 25 minutes. Remove from heat and allow to rest overnight. Decant into a sterilised glass bottle. This will keep for up to 2 weeks, unrefrigerated and sealed.
For the SohBar star anise syrup, add the SohBar simple syrup and star anise to a pot and bring to a boil. Reduce the heat and allow to simmer, 25 minutes. Remove from heat and allow to rest overnight. Strain and decant into a sterilised glass bottle. This will keep for up to 2 weeks, unrefrigerated and sealed.
For the cocktail, muddle the grapefruit wedges with the granadilla, pineapple juice, ginger juice and syrup together in a tall glass. Add the mint leaves and fill the glass with crushed ice. Mix all the ingredients together with a bar spoon.
Top up with soda water and gently stir to incorporate. Garnish with the pomegranate foam, if desired.
