Put the water in a pot and add the orange, cloves, cinnamon, ginger and honey. Bring to the boil and simmer for 30 minutes. Turn the heat off and let the mixture steep for a further 30 minutes. Strain. Reheat the liquid and pour into 2 mugs. Add the rum, lemon rind and mint, and use a long cinnamon stick to stir and serve. Drink while still hot.Hot and spicy winter toddy
