• Potatoes are the quiet overachievers of the kitchen. They crisp, mash, roast, and fry their way into just about every craving. But while they’re easygoing on the plate, they’re a little fussy behind the scenes – especially when it comes to where you store them.  

    If your instinct is to pop them into the fridge to “keep them fresh,” it might be time for a rethink.

    The fridge myth, busted

    It feels logical: colder equals longer-lasting. But potatoes don’t play by those rules. The cold temperature inside your fridge actually messes with their chemistry. 

    When potatoes get too cold, their natural starch starts turning into sugar. And that’s where things go sideways. 

    You might notice: 

    • A slightly sweet, almost off flavour (not ideal for your creamy mash)  
    • Uneven browning when cooking – think patchy, overly dark chips  
    • A shorter shelf life than expected  

    In other words, the fridge doesn’t preserve your potatoes – it changes them. 

    So, where should they go?

    Potatoes prefer a middle ground: cool, but not cold. Think pantry, cupboard, or a tucked-away corner of your kitchen. 

    Your ideal setup: 

    • Cool: not warm, not chilly  
    • Dark: light encourages greening (and a bitter taste)  
    • Well-ventilated: airflow helps prevent moisture and rot  

    A paper bag, a basket, or even a cardboard box works beautifully. Plastic bags? Not so much – they trap moisture, which speeds up spoilage. 

    One more thing: keep your potatoes away from onions. They may be a dream team in cooking, but in storage they’re not friends – onions release gases that make potatoes spoil faster. 

    When the fridge does make sense

    There are a couple of exceptions where your fridge can step in and help: 

    • Peeled or cut potatoes: Submerge them in water, cover, and refrigerate – but use within a day.  
    • Cooked potatoes: Store in an airtight container in the fridge and enjoy within 3 – 4 days.
