• Look no further for a tasty pasta dish that contains all the health benefits for your kiddies. This recipe is so good they will never figure out that they are eating veggies.

    Hidden veg pasta

    Serves: 2-4
    Prep Time: 10 min Total Time: 40 min

    Ingredients

    • 3 tomatoes, cut into quarters
    • 4 small baby marrows, chopped
    • ½ onion, cut into wedges
    • 200 g baby carrots, tops removed
    • 1 red pepper, deseeded and chopped
    • 2 garlic cloves, chopped
    • 1 ½ tsp dried basil
    • 2 tbsp olive oil
    • ¾ cup cream
    • Penne pasta, cooked
    • 1-2 cups Grated white cheddar cheese for topping

    Instructions

    PREHEAT the oven to 200 °C

    ADD vegetables to a baking tray and sprinkle over dried basil.

    POUR over olive oil and season. Toss to evenly coat.

    BAKE in the oven until golden brown and slightly charred, about 15-20 minutes

    REMOVE from the oven and transfer to a blender with cream and blend on high until smooth, adding more cream if you need.

    POUR your blended sauce over your cooked penne pasta and stir to coat. Season well.

    Transfer to a small casserole dish and top with grated cheese. Bake in the oven until golden brown and bubbly, about 10 min.

    Notes

    We used ¾ of a packet of a 500 gram packet of penne pasta for this recipe. But you can use any pasta of your choice.
