- Salad
 - 1 cup quinoa, cook according to package instructions
 - 1 cup cherry tomatoes, halved
 - 1 cucumber, diced
 - 1⁄2 cup canned lentils, drained and rinsed
 - 1⁄2 cup parsley, finely chopped
 - Dressing
 - 1 tbsp lemon juice
 - 1 tbsp vinegar
 - 1⁄4 cup olive oil
 - Salt, to taste
 - 1 tsp freshly ground pepper
