Nothing beats a freshly baked scone, especially when it’s topped with a generous helping of strawberry jam and whipped cream. These air fryer scones are ready in just 20 minutes, with only 15 minutes of baking time, making them an easy weekend bake when a craving strikes. The addition of amasi gives the scones a subtle tang that balances the sweetness of the jam and cream beautifully. Serve them warm with a cup of tea for a teatime treat that’s hard to beat.
Air fryer scones with strawberry jam and whipped cream
Ingredients
- 2 cups self-raising flour
- 50 g butter, chilled and cubed
- 1 egg
- 200 ml amasi or buttermilk
- milk, for brushing over scones before baking
- extra flour for dusting
- To serve
- Strawberry jam (or any other flavour)
- Whipped cream
- Optional: grated cheese
Instructions
In a bowl, add the flour and butter. Gently rub the butter into the flour until they form breadcrumbs. Try to work quickly, so as not to melt the butter.
In another bowl/jug, whisk together the amasi and egg.
Pour most of the mixture into the flour, and mix with a knife. Add the rest of the amasi/egg mixture until a shaggy dough forms. Add a tablespoon of flour at a time if you feel the dough is too wet.
Drop the dough out onto a lightly floured surface. Gently pat the dough into an elongated shape.
Fold one half over onto itself and pat gently to seal. Form the dough into a circle, about 3 to 5 cm thick.
Use a knife to divide the dough into 8 triangles. You can use a cookie cutter to form rounds if you prefer.
Place this onto a floured board and pop into the fridge for 10 to 20 minutes to cool the dough down.
Pre-heat the air fryer at 200ºC for 5 minutes before baking.
Use the milk to brush onto one batch of cooled scone triangles before air frying at 195ºC for 15 minutes.
Leave to cool while you get the jam ready and whip the cream.
Top with jam and whipped cream and enjoy with a freshly brewed cup of tea.
