If you think potatoes can’t get any better, you haven’t tried baby potatoes with crispy onions. This easy and delicious side is a great addition to the dinner table, and so easy to make. Why not try this dish with a tender rack of lamb?

Baby potatoes with crispy onions
Ingredients
- oil, for deep-frying
- 2 onions, roughly chopped
- 30ml (2 tbsp) flour
- 2,5ml (½ tsp) cinnamon
- 600g baby potatoes, peeled
- 2,5ml (½ tsp) salt
- 100g butter
- 50g fresh chives, finely chopped
Instructions
Heat the oil over low heat for deep-frying.
Toss the onions in the flour and cinnamon, and deep-fry until the onions are cooked and golden in colour. Drain and set aside.
Boil the potatoes in salted water until soft. Peel and toss with the butter and chives.
Heat the potatoes in the oven just before serving and sprinkle with the crispy onions.
