• Cook’s tip: You can also use plain icing and decorate with jelly tots, smarties, crushed candy canes, chocolate chips, hundreds and thousands, etc. Decorating biscuits is a great activity for children’s parties.

    Colourful butter biscuits

    Serves: Makes 30 large biscuits
    Cooking Time: 50 mins + overnight for proving

    Ingredients

    • Biscuits

    • 250g butter, softened
    • 250g icing sugar
    • 630g cake flour
    • 5ml (1 tsp) baking powder
    • pinch of salt
    • Topping

    • 300g white chocolate, melted
    • edible print, available from specialised baking stores

    Instructions

    For the biscuits, beat the butter and icing sugar in a food processor until creamy. Slowly add the rest of the ingredients and mix to form a stiff, pliable dough. If it is too dry, add a little water.

    Divide the dough into 2 and roll each piece out, then shape into a log about 8cm long. Cover with plastic wrap and refrigerate overnight.

    Preheat the oven to 180°C.

    Slice the logs into rounds, each about 0,5cm thick.

    Line baking trays with baking paper and place the rounds a few centimetres apart. Bake until golden brown, for about 15 – 20 minutes. Remove from the oven and leave to cool.

    To serve, dip one side of the biscuit into the chocolate and before it sets, cover the chocolate with the print.
