• Cold weather got you down? Warm up with a bowl of this hearty, sausage-packed creamy bean soup – it’s comfort in every spoonful.

    Creamy bean and sausage soup

    Serves: 4-6

    Ingredients

    • Vegetable oil
    • 1-2 Chorizo or smoked sausage of choice ( bratwurst)
    • 3 tbsp butter
    • 1 onion, peeled and finely chopped
    • 2 carrots, peeled and finely chopped
    • 1 large tsp minced garlic
    • Salt and freshly ground pepper
    • ¼ cup flour
    • 3-3 ½ cups chicken stock
    • 1 cup milk or cream
    • 2 cans cannellini beans, drained and rinsed
    • Chopped parsley

    HEAT a pot over a medium-high heat. Add in the vegetable oil. Once hot, add the sliced sausages and cook until browned on all sides. Remove sausages slices from the pot and set it aside.

    IN THE SAME pot, melt the butter. Add the chopped onion, carrots, garlic and season with salt and pepper. Stir to combine. Cover and cook for 7-10 minutes, or until the onion becomes translucent.

    SPRINKLE the flour over the vegetables and stir well. Cook for 1 minute. Lower the heat to medium low and pour in the stock, milk/cream, and stir to combine. Bring the mixture to a simmer.

    RETURN the browned sausages to the pot and add in the beans. Simmer the soup, stirring occasionally until thickened, about 15-20 minutes. If the soup is too thick to your liking, feel free to add in a bit more stock.
