• This delicious Vegan choc chip skillet cookie is perfect for a slumber party, movie night or Friday dessert fest! The goal was to create a dessert that was familiar but that also pushed boundaries, it’s totally vegan friendly and absolutely moreish. Our team could not stop sampling! With a soft cookie interior and thin crisp exterior and gooey melted chocolate chunks, it will solve all your cravings. We paired it with some deliciously smooth vegan coconut ice cream, but feel free to use any vegan addition you like! Read on to see how to make this for your next get together!

    Vegan Choc chip skillet cookie

    INGREDIENTS

    • 1 cup vegan butter, softened

    • cup white sugar

    • 1 cup brown sugar

    • ½  cup plant-based milk

    • 2 tsp. vanilla

    • 4 cups flour

    • 1 tbsp. baking powder

    • 1 tsp. baking soda

    • ½  tsp. salt

    • 250 grams vegan dark chocolate, roughly chopped

    • 2 tsp. sea salt flakes

    • Vegan ice cream, to serve

    METHOD

    1. Preheat the oven to 180°C. Grease a 25 cm skillet with non-stick spray.

    2. Beat the butter and sugars in the bowl using an electric mixer until pale and creamy, about 3 minutes.

    3. Add in the milk and vanilla and beat to combine.

    4. Sieve the flour, baking powder, baking soda and salt together in a separate bowl . Add to the wet ingredients and mix until just combined.

    5. Fold in most of the chocolate chunks. 

    6. Spread batter in the skillet and sprinkle over remaining chocolate chunks and salt flakes.

    7. Bake for 25–30 minutes until golden brown and the edges of the cookie are puffed up.

    8. Top with scoops of ice cream and serve while still warm.
