Ingredients
- Dressing
- 2 egg yolk
- ½ tsp crushed garlic
- 6 Anchovy fillets
- 3 tbsp lemon juice
- 150ml olive oil
- 15g parmesan cheese
- Salt and pepper
- To Serve
- Rotisserie chicken, breast chopped.
- Penne pasta, cooked
- Cherry tomatoes, chopped
- Lettuce, chopped
- Store Bought Croutons
- Parmesan cheese block for shavings as garnish
Instructions
Dressing

ADD egg yolks, garlic, anchovies and 1 ½ tbsp of lemon juice to a blender and blend on high for 15-20 seconds.

WITH the blender on high speed, gradually pour in the oil, until dressing becomes thick.

ADD in the remaining lemon juice and parmesan cheese. Season to taste
To Serve

LAYER the ingredients together in a jar

WHEN READY, tip the salad into a bowl , garnish with parmesan shavings
