• Flour-free hazelnut, chocolate and cinnamon biscuits

    Ingredients

    • 130g ground hazelnuts
    • 150g icing sugar
    • 2,5ml (½ tsp) ground cinnamon
    • 50ml cocoa powder, plus extra to dust
    • 4 large egg whites
    • 60ml (¼ cup) castor sugar
    • 100g dark chocolate chips

    Instructions

    Preheat the oven to 160°C and line a baking tray with baking paper.

    Mix the hazelnuts, icing sugar, cinnamon and cocoa powder in a bowl.

    Whisk the egg whites and castor sugar together until stiff peaks form. Fold in the hazelnut mixture and the chocolate chips.

    Spoon tablespoonfuls of the mixture onto the baking tray, leaving a 5cm gap around each spoonful to allow for spreading. Bake for 10 – 12 minutes. Dust with cocoa powder.
