    Kershni’s minted chocolate chip brownies

    Ingredients

    • 180g castor sugar
    • 125g butter
    • 30ml water
    • 250ml dark chocolate chips
    • 2 tsp vanilla essence
    • 150g flour
    • 1 tsp baking soda
    • Pinch salt
    • 2 eggs
    • 250ml milk chocolate chips
    • 50g icing sugar
    • 1 tsp mint essence
    • Mint leaves, to garnish

    Instructions

    Preheat oven to 180*C.

    Grease and line a 20x20 square baking tin.

    Place sugar, butter and water in a pot and heat over a medium heat until butter is melted.

    Remove pot from heat add dark chocolate. Stir it gently until chips are melted and all is combined.

    Stir in vanilla and let stand for 5 minutes to cool. After cooled, beat eggs into chocolate mixture, one at a time.

    Add flour and mix well. Stir in milk chips and mint essence and spread butter into a baking pan.

    Bake for 25 to 30 minutes. Remove pan to wire rack and let cool completely before you slice the brownies into 12 squares.

    Serve on tray, dust with icing sugar and garnish with fresh mint leaves.
