• Lime and sugar churros

    Serves: 4-6
    Cooking Time: 30 mins

    Ingredients

    • 250ml (1 cup) water
    • 45ml (3 tbsp) white sugar
    • 2,5ml (½ tsp) salt
    • 30ml (2 tbsp) vegetable oil + extra, for frying
    • 120g (1 cup) cake flour
    • ½ cup castor sugar
    • 5ml (1 tsp) ground cinnamon
    • fresh lime, to serve
    • dark melted chilli chocolate, to serve

    Instructions

    Combine the water, sugar, salt and 30ml (2 tbsp) vegetable oil in a small saucepan over medium heat. Bring to a boil and remove from heat.

    Add the flour and stir until the mixture forms a ball.

    Heat the oil for frying.

    Place the batter in a piping bag fitted with a star nozzle. Pipe strips of dough into the hot oil and fry until golden. Remove from the oil and drain on paper towel.

    Mix the castor sugar and cinnamon together, and roll the warm churros in the mixture.

    Serve with fresh lime and chilli chocolate.
