• Melon and cucumber salad

    Ingredients

    • SALAD
    • 1 small spanspek melon, peeled, seeded and sliced
    • 1 small cucumber, peeled, seeded and sliced
    • 6 bocconcini, halved
    • 30ml fresh mint, chopped
    • 30ml fresh basil, chopped
    • salt and freshly ground black pepper, to taste
    • DRESSING
    • 30ml olive oil
    • 30ml white wine vinegar
    • 5ml castor sugar

    Instructions

    Arrange the ingredients for the salad on a platter or on individual plates, and scatter the mint and basil leaves over.

    Mix together the dressing ingredients and pour over the salad. Season and serve.

    Notes

    Bocconcini are baby mozzarella balls, available at delis and supermarkets.
