Creamy, rich and packed with cheesy flavour, this crowd-pleasing classic is the ultimate cosy dinner for chilly evenings, family gatherings or those days when only comfort food will do. With its golden baked topping and velvety cheese sauce, this is the kind of recipe you’ll find yourself making on repeat.
Macaroni and cheese
Ingredients
- 500 grams macaroni or pasta of choice, cooked according to packet instructions
- 4 tbsp butter
- 4 tbsp flour
- 1 tbsp onion powder
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1L- 1.2 L warmed milk
- 1 ½ cups grated cheddar cheese, plus extra for topping
- 1 ½ cups grated white cheddar plus extra for topping
- 2 tsp dijon mustard
- Salt and freshly ground pepper to taste
- 1 cup mozzarella for topping
- 1 tbsp parsley
Instructions
PREHEAT the oven to 220ºC
HEAT butter in a pot over medium heat. Once melted, add in flour and spices. Stir to combine and cook for 1 minute.
GRADUALLY pour in warm milk, whisking after every addition.Bring to the boil and cook for 1-2 minutes on a low heat. Add in cheese and dijon mustard. Cook for 2-3 minutes until the cheese is fully melted.
ADD pasta to the sauce and mix to combine. Season to taste.
TRANSFER into a baking dish and top with extra cheese.
BAKE for 15-20 minutes, until golden brown and crispy.
SERVE topped with chopped parsley.
