• Steamed prawn tails with zesty Asian dressing

    Cooking Time: 30 mins

    Ingredients

    • 18 extra-large prawn tails
    • 75ml light soya sauce
    • 75ml honey
    • 50ml peanut oil
    • 25ml fish sauce
    • 50ml fresh lime or lemon juice
    • 2cm ginger root, minced
    • 1 red chilli, thinly sliced
    • 25g fresh coriander, roughly chopped

    Instructions

    Place the prawn tails in a large saucepan and add a little water to cover the base. Cover with a lid and bring to a boil.

    Allow to steam for 4 – 5 minutes and drain.

    Combine the rest of the ingredients and toss the prawns in some of the dressing.

    Arrange on a platter and serve immediately with the remaining dressing on the side.
